No frills. Just great sourdough!
BUT FIRST THE MOST IMPORTANT TIP:
FLOUR… every flour is different. Start out at 60% water (in this recipe 600g) and see how the loaves turn out. As you will need to learn your ingredients along with the process! Each flour takes on water in a different way and amount! So if it turns out really sticky - your flour can’t handle the amount of water you have added. Simple.
SIMPLE SOURDOUGH BREAD RECIPE:
1000g strong bread flour
700g water
200g active sourdough starter
20g salt

add your water and starter then mix.
Add your flour and mix to a shaggy dough. Rest for 30 minutes
Add your salt and mix until smooth. Then rest for 30 minutes
Stretch and fold time - every 30 minutes for the next 2 hours (4 sessions) stretch and fold your dough.
Rest for 1 hour
Split into 2 and ball up/bench rest.
Shape and get into your baskets and then straight into the fridge
Next morning bang your oven up to 250°C and get a Dutch oven in.
When at temp - take your dough out the fridge - place straight into the hot Dutch oven. Score. Put the lid on and bake for 30 minutes
Remove the lid and bake until your desired level of toastiness
