Crispy Pork Carnitas Bowls

The Pork: 1.5 lb pork shoulder (butt), cut into large chunks.

Aromatics: 1/2 cup orange juice, 1 onion (quartered), 3 cloves garlic (smashed), 1 tsp cumin, 1 tsp salt.

The Base: 100% corn tortillas or white rice.

Toppings: 1 ripe avocado (mashed or sliced), fresh lime wedges, chopped cilantro.

Slow Cook: Place the pork, orange juice, onion, garlic, cumin, and salt in a slow cooker. Cook on Low for 7–8 hours (or High for 4).

Shred: Remove the pork and shred it with two forks. Discard the onion/garlic chunks.

Crisp (The Key Step): Heat a tablespoon of oil in a skillet. Add the shredded pork and press down. Let it sear for 3–5 minutes until the edges are crispy.

Serve: For the toddler, serve a "power bowl" with a heap of pork, a scoop of rice, and plenty of mashed avocado. For the adults, serve in charred corn tortillas with lime and cilantro.
