GARLIC BREAD DIP

• 2 boneless skinless chicken tenderloins (or 4 oz any chicken)
• 1 tsp minced garlic
• 1 tsp Italian seasoning
• salt, pepper to taste
• 1 light laughing cow cheese
• 1/2 cup (blended) cottage cheese or greek yogurt
• 2 TBS skim mozzarella
• optional toppings: crushed croutons or pita chips for dipping

Prepare chicken, I like to season them with salt, pepper, garlic, paprika then air fry 400 5 min, each side (let them rest a couple minutes before shredding or chopping into small pieces), rotisserie chicken also works great in this one!
Add all ingredients to small bowl or tupperware (except cheese which goes on top)
mix well then add shredded cheese
microwave for 1-2 min (or bake) until hot and melty, top with a sprinkle of crushed croutons if preferred. I like to eat this with a mindful serving of pita thins and sliced veggies!
