Candied Lemon Slices and Lemon Syrup

Candied Lemon Slices & Lemon Syrup

3 lemons, sliced, with rind on

3 1/2 c sugar

4 c water

Heat water and sugar to dissolve sugar. Add lemons, simmer for 30 mins. Take off heat and cool in syrup. Remove lemons and drain. Bake at 200 degrees.

Use syrup to make candied nuts, reduce for a garnishing sauce/syrup, or use to poach fruit.
