Fluffy Homemade Buttermilk Pancakes

Ingredients: • 2 cups flour • 1 tsp kosher salt • 2 tsp baking powder • 1 tsp baking soda • 2 tbsp sugar • 2 eggs • 2 cups buttermilk • 2 tbsp melted butter (plus more for serving) • Avocado oil (for cooking) • Warm maple syrup (for serving)

Directions:

1. Whisk together dry ingredients.

2. In a separate bowl, whisk eggs and buttermilk.

3. Combine wet and dry ingredients; mix until just combined. Fold in melted butter.

4. Heat a thin layer of avocado oil in a nonstick skillet over medium heat. Pour ⅓ cup batter per pancake; cook until bubbles form and edges are set, about 2 minutes. Flip and cook until golden brown, about 1½ minutes.
