Beef Stew

2 pounds of sirloin (cut into chunks)

1/4 cup of olive oil

2 tbsp of flour

1 tbsp of smoked paprika

1 tbsp of garlic powder

Salt and pepper for seasoning

2 yellow onions (finely chopped)

3-4 garlic cloves (finely chopped)

1 tsp of tomato paste

1 cup of red wine

4 cups of beef broth

4-6 yellow medium potatoes (chopped)

3 large carrots (chopped)

1 tsp of parsley

1 tsp of Rosemary

1 tsp of thyme (optional)

1/4 tsp of cayenne (optional)

1 cup of peas

Cut beef of choice into chunks. Coat with flour, smoked paprika, garlic powder, salt and pepper.

Heat olive oil in a large pot and brown meat for 2-3 minutes per side.

Remove from pot and to the same oil add onions and garlic. Let fry until onions are translucent and add tomato paste. Stir to combine and pour in red wine.

Let slightly reduce and add beef back in, along with 2 cups of beef broth and spices

Lower heat to medium-low, cover, and let simmer for an hour

Uncover, add potatoes, carrots, and the remaining beef broth. Increase heat to medium, cover, and cook for another 30 minutes

Uncover, add peas, increase heat to medium-high, and let cook for 8-10 minutes allowing sauce to thicken
