Melon and Cuke Salad with Serrano Lime Dressing

1 English cucumber

1 serrano pepper

2 big handfuls mint or basil leaves (or a mix of both)

2 limes

2 pounds ripe melon (any variety!)

¼ red onion

2 tablespoons olive oil

¾ teaspoon kosher salt

Flaky sea salt, for finishing

1. Make the dressing:

Coarsely chop ½ English cucumber and ½ serrano pepper. Add them to a blender along with one big handful of mint or basil, the juice of 2 limes, 2 tablespoons olive oil, and ¾ teaspoon salt.

Blend on high until well combined and no pieces of cucumber or serrano remain, about 1 minute.

2. Prep the veg:

Cut ½ melon into 4 wedges. Cut away and discard the skin. Slice each of the wedges into thinner ½” thick wedges.

Slice the remaining ½ cucumber crosswise into rounds.

Thinly slice ¼ red onion through the root end.

Thinly slice the remaining half serrano chili.

3. Serve:

Pour some of the cucumber dressing into the bottom of a shallow serving bowl or platter.

Working in layers, arrange some of the melon, cucumbers, and red onion on top, then drizzle some more of the dressing, before adding the remaining slices and more dressing. Drizzle with olive oil. Season with flaky sea salt.

Garnish with more mint or basil and serve chilled.
