Greek Lemon Potatoes

1/4 cup of olive oil
Juice of a whole lemon
1-2 tbsp of dried oregano
1 tsp of salt and pepper
1-2 freshly grated garlic cloves
1 cup of vegetable or chicken broth
6-8 yellow flesh potatoes
Fresh parsley

Combine all your ingredients into a deep baking dish Cover with aluminum foil and bake at 425 F for 25 minutes Uncover and bake for an additional 20 mins Broil for 3-5 minutes (depending on how crispy you want them) Top with fresh parsley
