DGF Bubie's Potato Latkes

Ingredients:

1 baking potato per person (this recipe is based on 5)

1 egg for every 5- 6 potatoes

1 large sweet onion

1 large carrot

1 -2 tablespoons flour

1 tablespoon salt

1 teaspoon pepper avocado or canola oil for frying

1. Peel potatoes, put through food processor on shred blade. Place shredded potatoes in a strainer, to drain excess liquid Put onion and carrot

2. through processor as well. Add all ingredients together in a bowl, give a good toss Add flour, salt, pepper &

3. egg, mix well Heat oil on medium-high,

4. scoop a golf ball sized scoop into pan, gently pat mixture down and fry until golden (approx. 5 min per side)

*I use a large cookie scoop. Serve with sour cream & apple sauce I leave the potato mixture in a large strainer beside the stove as I am frying to continue draining ...
