The Best Lamb Chops Ever

Marinade (6–8 lamb chops)
1/3 cup good balsamic vinegar
2 tbsp Worcestershire sauce
1/4 cup olive oil
3 garlic cloves minced + 2 smashed
2 tbsp fresh rosemary chopped
1 tsp salt
1 tsp black pepper
1 tsp onion powder
1 tsp garlic powder
1 tsp red pepper flakes
2 tbsp brown sugar
Mix, coat lamb, refrigerate 3–6 hours (or overnight)
Sear
2 tbsp olive oil (for pan)

Heat pan very hot
Sear 3–4 min per side
Remove lamb, reduce heat to medium
Basting Sauce
3 tbsp butter
2 garlic cloves minced
2 tbsp honey
1 tbsp fresh rosemary
2 tbsp balsamic vinegar
Melt butter → add garlic → stir honey + rosemary + balsamic
Return lamb, baste 1–2 min per side
Finish (medium)
Cook to 140–145°F (60–63°C)
Rest 5 min
Serve with pan sauce spooned over top
