Honey miso salmon with zesty herb and pomegranate topping.
1 salmon fillet
For honey miso sauce
1/4 cup honey
2-3 tbsp miso (I used white)
2 tbsp soy sauce
Zest and juice of 1 lime
2 garlic cloves, finely grated
1 tsp grated ginger
For zesty herb and pomegranate topping
2 cups loosely packed cilantro (with stems), finely chopped
2 cups loosely packed parsley, finely chopped
5-6 mint leaves, finely chopped
3 green onions, sliced
1/3 -1/2 cup pomegranate seeds
1 tbsp toasted sesame seeds
Zest and juice of 1 lime
1 tsp honey
Drizzle of olive oil
Salt and pepper
步驟
Preheat oven to 400
Mix Honey miso sauce ingredients until smooth using a whisk or a blender.
Spread over salmon fillet.
Bake at 400 for 25 min (or until cooked through - will depend on thickness of salmon)
Baste salmon every 10 minutes.
While salmon is baking…
Mix all topping ingredients together.
Once salmon is ready, spread over salmon and enjoy
