Crunchy Chocolate Energy Bars

The steps to preparing your own wholesome, crunchy energy bars:

For the dry ingredients:
In a large bowl, mix together:
½ cup puffed quinoa
¼ cup chia seeds
1 cup rolled oats
½ cup chopped almonds
¼ cup pumpkin seeds
¼ cup dried cranberries
For the sticky mixture:
In a small saucepan over medium heat, combine:
½ cup peanut butter
⅓ cup honey (warmed)
Stir constantly until smooth and slightly runny.
Combine and mix:
Pour the warm sticky mixture over the dry ingredients.
Mix thoroughly until everything is evenly coated.
Shape the bars:
Press the mixture firmly into a lined pan or mold.
Use the back of a spoon or spatula to create an even layer.
For the chocolate topping:
Melt together over low heat:
½ cup dark chocolate chips or chunks
1 tablespoon coconut oil
Spread the melted chocolate evenly over the pressed mixture.
Optional toppings:
Sprinkle on top:
A pinch of fleur de sel
Crushed almonds or extra quinoa for texture
Let it set:
Freeze for 1 hour or until firm.
Slice and serve:
Cut into clean, rectangular bars.
