Pumpkin Cheesecake Bars

1 1/2 cups graham cracker crumbs
6 tbsp unsalted butter, melted
1/4 cup granulated sugar
16 oz cream cheese, softened (2 packages)
1 cup granulated sugar
1 tsp vanilla extract
2 large eggs
1 cup pumpkin puree
1/4 cup sour cream
1 tsp pumpkin pie spice

Preheat oven to 350°F (175°C).
Crush the graham crackers, finely. You can use a rolling pin or blender.
In a medium bowl, add the graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9×13 inch pan.
Bake crust for 10 minutes.
In another medium bowl, add and beat the cream cheese and sugar until smooth. Mix in vanilla and eggs.
Divide batter in half.
To one half, add the pumpkin puree, sour cream, and pumpkin pie spice.
Drop spoonfuls of each batter alternately over the crust.
Swirl with a knife, chopstick, toothpick.
Bake for 25-30 minutes, or until set.
Let cool completely before cutting into bars.
Storing: refrigerate. Enjoy 🧡
