Bourbon Chili

2 Tbsp vegetable oil

320z Chicken broth or vegetable broth

3 pounds of chuck steak cut into small cubes

1 large yellow onion, chopped

2 jalapeños, seeded and chopped

Chili paste to taste

1 cup bourbon

1 habanero pepper (optional for Spicy), seeded and chopped

5 large cloves garlic, diced

2 Tbsp brown sugar

6 roma tomatoes, cored and chopped

12-ounce can red kidney beahs, rinsed and drained

Salt & pepper to taste

步驟

1) In a large stock pot, heat vegetable oil over medium-high heat until it shimmers.

2) Brown the beef in batches, ensuring all sides are cooked.

3) Once at least half of the beef is browned, add onions, jalapeños, habanero, and garlic to the pot. Sweat the ingredients briefly before deglazing the pot with bourbon.

4) Stir in tomatoes, brown sugar, kidney beans, beef, chili paste, and whichever stock you prefer. Mix everything until well combined, and bring the mixture to a gentle simmer.

5) Let the chili simmer for 2-3 hours, or until the beef becomes tender and the chili thickens.

6) Season with salt and pepper to taste.

筆記

Note: If you want to make this recipe vegan, you can skip step 2 (browning the beef) and instead add additional vegetables of your choice. In step 3, sweat the onions, jalapeños, garlic, and habanero before deglazing the pot.
