High Protein Cottage Cheese Bagels Have Gone Viral

I decided to make mine using spelt flour, and they were absolutely perfect!

Make em’… you won’t regret it!

What you’ll need: 👩🏻🍳

1 1/4 cup cottage cheese (full fat is best.. I used @good_culture

1 cup spelt flour (you can use white or whole wheat as well)

1 1/2 tsp baking powder

Everything but the bagel seasoning + thick Himalayan pink salt

Make it:

Preheat the oven to 375°F. Place baking sheet in the over to preheat as well.

Using a small food processor or blender, blend the cottage cheese until smooth.

Transfer it to a medium bowl and add in the flour and baking powder.

Mix until completely combined and the dough starts to pull away from the sides of the bowl.

Transfer the dough to a floured work surface and knead until smooth. (Add more flour to the work surface as needed until the dough is no longer sticky).

Roll the dough into a ball and divide it into 4 equal balls.

Roll each segment of the dough into a round ball, and then poke a hole in the center. (I used an apple corer, but you can use your thumb and shape it into a bagel).

Brush the tops with a beaten egg and top with your seasoning.

Remove hot baking sheet from the oven and place a Silpat, or a piece of parchment paper on it.

Carefully place your bagels on the pan and place into the oven.

Bake in the until puffed and golden brown, 25-30 minutes. Allow to cool for 15 minutes before slicing and serving.
