Ezme Salad

2 red bell peppers
1 onion
3 tomatoes
small bunch of parsley
2 chilies of choice
salt & pepper
1 tbsp pepper paste or tomato paste
1 tsp sumac
1 tsp dried mint
a drizzle of @ndcmuscat olive oil
lemon
blend all the veggies together then strain through a sieve.
season with salt. Dried mint. Sumac. Pepper paste or tomato paste. A lemon. A drizzle of olive oil and mix it thoroughly.
let the mixture sit for at least 30 minutes in the fridge so all the flavors get to know each other.
serve with a drizzle of olive oil on top. Have it with grills or on its own with a loaf of bread and enjoy.
