One-pan Sweet & Tangy Bbq Sausage Rice

14 oz smoked sausage, sliced into rounds
1 tbsp olive oil
1 small onion, diced
1 cup uncooked long-grain white rice
2 cups chicken broth
½ cup BBQ sauce
1 tbsp brown sugar
1 tbsp ketchup
½ tsp paprika
½ tsp black pepper
½ tsp onion powder
½ cup diced bell peppers (optional)
2 tbsp chopped green onions (optional)

Heat olive oil in a large 12-inch skillet with a lid over medium heat.
Add sliced sausage and cook 4–5 minutes until lightly browned.
Add onion (and bell peppers if using) and cook 3–4 minutes until softened.
Stir in uncooked rice and cook 1–2 minutes to lightly toast.
Pour in chicken broth, BBQ sauce, brown sugar, ketchup, paprika, black pepper, and onion powder. Stir well.
Bring to a gentle boil.
Reduce heat to low, cover, and simmer 18–20 minutes until rice is tender and liquid is absorbed.
Remove from heat and let sit 5 minutes.
Fluff the rice, garnish with green onions, and serve warm.
