Lemon Chicken

1 lb chicken breast, cut into cubes
2 lemons
1/2 cup dry white wine
1/2 cup all-purpose flour (for dredging)
Salt & pepper
Olive oil
1 knob of butter
Fresh parsley, chopped
步驟
Cut the chicken into cubes & lightly coat in flour.
Heat olive oil generously in a pan over medium heat. Add the chicken & cook until golden.
Season with salt & pepper.
Pour in the white wine & let it cook out.
Grate the zest of one lemon, peel the other into thin strips, & squeeze the juice of both.
Add zest, peel, & lemon juice to the pan.
Add the butter and parsley, cover, and cook on low for about 5 min until the chicken is fully cooked & coated in a silky lemon sauce.
