Lentil Dahl Curry

200g lentils
Water (to cook the lentils)
Vegetable stock
5 sliced red onions
4+ garlic cloves
Ginger
240ml coconut milk (optional)
1 chopped green chilli
5 curry leaves
1 tsp curry powder
1 tsp coriander seeds
1 tsp cumin seeds
1 tsp mustard seeds
Turmeric
Paprika powder
A few tomatoes
Salt to taste

1. Cook the lentils in the vegetable stock.
2. In a frying pan, sauté the onion, garlic, tomato and ginger.
3. Fry the spices in another pan.
4. Add the spices to the other pan.
5. When the lentils are cooked, add the mixture and cook to taste.
6. Add coconut milk, more spices, salt etc. as required.
