High Effort Fudgy Brownies

1 stick of butter (8 oz, 115 g)

225g chocolate, 70% recommended (8 oz)

100g brown sugar

75g white sugar

75g cocoa powder

100g flour

3 eggs (cold)

5g instant coffee / espresso powder (double this for a more coffee-forward dessert)

5g / 1 tsp kosher salt

60g olive oil

8g vanilla extract

50g buttermilk

Preheat a saucepan over high heat for about 30 seconds and add the butter. Stir constantly and allow the butter to melt and brown. Once the color is dark and golden, remove from the heat.

Add the chocolate and instant coffee and stir to combine. Allow the saucepan to continue sitting off the heat and melt the chocolate.

Add the eggs, brown sugar, and white sugar to a large bowl and whisk on medium high until thick and fluffy. This is best done with a hand mixer or stand mixer. Once completed, the color of the mixture should have lightened significantly.

Continue whisking and add the olive oil, vanilla, and buttermilk. Once everything is incorporated, add the butter and chocolate mixture from the saucepan and whisk until combined.

In another large bowl whisk together the flour, cocoa, and salt. Add the dry mixture to the whipped eggs while whisking on low. Use a spatula to scrape down the sides and ensure everything is incorporated.

Transfer the mixture to a prepared 8” x 8” baking tray. Sprinkle with some chopped chocolate chunks as desired and refrigerate for 2-24 hours to hydrate.

Sprinkle with flaky salt and bake at 350 F for 24-26 minutes, rotating the pan halfway through. Rest on the counter to room temp, then optionally refrigerate until cool. Slice and serve.

There’s the Betty Crocker mixes that just need some eggs and oil, your mom’s homemade recipe, and the ones you find at the local cafe. This particular recipe takes a culinary view of brownies and through various techniques creates a very rich and fancy-feeling dessert. They utilize browned butter, acid, and a well thought out order of steps to build flavor and complexity. These are strongly in the fudgy brownie category (cakey brownies tend to have more eggs) and goes great with something light like whipped cream or vanilla ice cream.
