Ultimate Protein Cinnabon Muffin

Everyone’s making high-protein snacks that taste healthy.

These? Taste like a cinnamon roll. Look like a muffin. Act like breakfast. 😏

Blended cottage cheese + Greek yogurt → crazy moist, fluffy, and full of protein.

No sugar crash. No yeast. No waiting. Just mix, swirl, bake.

Recipe 👇

Dry Ingredients:

1¾ cups rolled oats (I used the @traderjoes version that has added grains for more fiber and protein)

2 tsp baking powder

1½ tsp cinnamon

Pinch salt

Wet Ingredients:

½ cup cottage cheese

½ cup Greek yogurt

2 eggs

4 tbsp maple syrup

1 tsp vanilla

2 tbsp avocado or coconut oil

Swirl: 1½ tbsp coconut sugar + 1 tsp cinnamon

I’m using rolled oats and making my own “oat flour” you can use oat flour in place but don’t process the dry ingredients just mix until combined ****

Process the dry ingredients and dump into a bowl

Process the wet ingredients and dump into the bowl with the dry ingredients.

Mix just until incorporated well.

In a separate bowl mix the cinnamon and sugar

Scoop a small scoop into a paper lined muffin tin.

Add a tsp. Of the cinnasugar mixture on top. Than add another 1/2 scoop of batter on top. Spread and then sprinkle with one last tsp of cinnasugar.

Bake 350°F — 20 min. Drizzle yogurt + maple syrup on top

Or make a cream cheese frosting.

Cream Cheese frosting:

1 8oz whipped cream cheese

1/2 cup confectioners sugar

Splash of milk

Mix till smooth. Keep cold until you use.
