Roasted Beet Salad

4-6 medium beets

2 tbsp olive oil

¼ tsp salt

2 packed cups fresh spinach @earthboundfarm

2 tbsp red onion, thinly sliced

For the dressing:

3 tbsp olive oil

2 tbsp balsamic vinegar

1 tbsp Dijon mustard @maillecanada

1 tbsp honey

1 tbsp fresh lemon juice

½ tsp salt

¼ tsp black pepper

Pinch of cayenne pepper

To finish

¼ cup toasted walnuts

½ cup feta cheese, crumbled @dodoni_international

步驟

Preheat oven to 400°F (200°C).

Trim the beets, leaving the skin on. Cut into quarters or large cubes.

Toss with olive oil and salt, then spread in a baking dish.

Bake for 50-60 minutes, until fork-tender and slightly caramelized.

While beets bake, whisk together all dressing ingredients until smooth.

Let beets cool slightly, then add to a bowl with spinach

and red onion.

Pour over dressing and toss gently to combine.

Transfer to a plate or serving bowl and top with walnuts and feta.
