Spicy Peanut Coconut Noodles

100g Ramen noodles

2tbsps Peanut butter

1/2 cup Coconut milk

1/2 cup water

2 tbsps Chilli oil

6 cloves Garlic - minced

1” Ginger - grated

2 stalks Green onion

1 ½ Sugar

2 tsps Lime Juice

1 Stock cube

1 tbsps Soy sauce

1 tsps - coriander powder

Sesame oil- 1tsp

Salt as required

For garnish:

Sesame seeds- 2 tsps

Chopped peanuts

Green onions

Process

For the Broth:

In a pan add neutral oil.

Once the oil is heated add ginger, garlic and onions and saute for about a minute. Add the coriander powder and cook it.

Add 1/2cup water along with soy sauce and stock cubes. Let the water simmer

Once the water is hot add in the peanut butter and chili oil. Adjust the seasonings

Add the coconut milk and let it simmer on a low flame.

Stir in the lemon juice and sesame oil once off the flame.

Add the noodles to the boiling water and let it cook for 4-5 mins or till they are completely cooked.

strain the noodles once done and rinse under cold water

In a bowl place the noodles and pour over the prepared broth

Garnish with chopped peanuts, green onions,sesame seeds and chili oil
