Peanut Udon - 10 Minutes

2 servings udon (shelf stable or frozen)

2 tbsp smooth peanut butter

1 ½ tbsp soy sauce

Splash of dark soy sauce, for colour (optional)

1 ½ tsp sugar

2 tsp toasted sesame oil

1 tsp chilli crisp/oil, or more to taste

1 heaped tsp grated ginger

1 clove garlic, finely chopped

Cook the noodles according to packet instructions. Drain and reserve 1/4 cup of the water. Give noodles a quick rinse with cold water to prevent sticking then set aside.

In a bowl, combine all of your sauce ingredients and mix well. Slowly add in the reserved water 1 tbsp at a time to thin out the sauce.

Add in the cooked udon and mix well until evenly coated.

To serve, garnish with sesame seeds, peanuts and green onion. Pair with veggies and your choice of protein for a complete meal. Enjoy! 🥢
