Baked Rack Of Lamb Meal Χοιρινο Με Μπυρα Στη Λαδοκολλα

1 ½ kg (3–4 lb) pork loin or pork rack, bone-in

4–5 potatoes, cut into wedges

3 carrots, cut into thick sticks

2 onions, quartered

4 garlic cloves

½ cup olive oil

1 can beer (330 ml)

1 tbsp mustard

1 tbsp honey

Juice of 1 lemon

1 tsp paprika (sweet or smoked)

1 tsp thyme (fresh or dried)

1 tsp rosemary (fresh or dried)

Salt & black pepper

步驟

In a bowl, whisk together olive oil, beer, mustard, honey, lemon juice, thyme, rosemary, paprika, salt, and pepper.

Line your baking pan with foil and cross two large sheets of parchment paper on top.

Toss the potatoes, carrots, onions, and garlic with half of the marinade right in the pan.

Place the pork on top (bones down), season again with salt, pepper & paprika, and pour over the rest of the marinade. Massage it well.

Wrap tightly with parchment and foil so the steam stays inside.

Bake:

5 hours at 140°C / 285°F, covered.

Then uncover and roast for 30 minutes at 180°C / 355°F until golden and caramelized.

Let it rest for 10–15 minutes before slicing. The meat will be falling apart, the veggies soft and sweet, and the sauce pure gold.
