Cranberry Oat Bars

8oz cranberry (fresh or frozen)

3 1/2oz sugar

1/4 cup water

6oz old fashioned oats

7 1/2oz flour

1 tsp ground cinnamon

1/2 tsp salt

2 sticks butter softened

10 1/2oz brown sugar

1 egg

3oz chopped pecan

Bake 325°F for 40min

  1. Bring cranberries, sugar, and water to boil on med-high heat. Cook stirring frequently until berries are popped and juice starts to thicken. 2-3 minutes cool 30 minutes.

  2. Preheat oven to 325°F. Make sling for 9x13 pan and grease.

  3. Whisk oats, flour, cinnamon, and salt together. Beat butter and brown sugar on med-high speed until light and fluffy. Add egg and mix until combined. Reduce to low ans add oad mix until combines. Transfer 2/3 to pan and press evenly. Spread cranberry mixture evenly. Add pecans to remaining dough and sprinkle on top. Bake until golden brown 40-45 min. Cool on rack for 2 hours. Cut into 24.
