2 packages of Uncle Ben's Spanish Rice

1 can of tomato chunks

1 can of tomato sauce (sub paste + water)

3 large bell peppers (green/yellow/red)

1 large onion

1 zucchini + 1 squash (optional)

1 can black beans, drained (optional)

1 can kidney beans, drained (optional)

1/2 cup of artichoke hearts (optional)

Salt and pepper to taste

Hot sauce / tabasco sauce to taste
