Basic Muffin Recipe

1/2 cup sugar

1/2 cup oil (I use sunflower oil), you can also use melted butter

1/2 cup yogurt

1/2 cup milk

1 egg

2 cups plain flour (gluten free flour also works)

2 tsp baking powder

Whatever flavourings you like: I used 1/2 cup white chocolate and 2 peeled and diced pears.

Other ideas include: 2 tbsp cocoa for chocolate muffins, chocolate chips, mashed banana, berries, apples etc

Whisk together sugar, oil, yogurt, milk, and an egg.

Add the flour and baking powder and fold until just combined. Add your flavourings (ie chocolate chips and pear)

Place into muffin cases and bake at 200 degrees Celsius (400 F) for around 15 minutes, until a skewer comes out clean.

These are great frozen and reheated too!
