Herb Frittata Panino

Makes 1 to 2 panini.

2 eggs, preferably cage-

1 tablespoon chopped basil

1 tablespoon snipped chives

1 teaspoon chopped marjoram

1 small garlic clove, peeled and very finely chopped

1 tablespoon freshly grated imported

Parmesan cheese

Salt and freshly ground black pepper

1 tablespoon unsalted butter

2-4 slices country bread

Crack the eggs into a bowl and beat lightly with a fork. Add the herbs, garlic, Parmesan, and salt and pepper to taste. Mix well. Place the butter in a small, nonstick ovenproof sauté pan. Turn the heat to high and when the butter just begins to brown, add the egg mixture. Turn down the heat and stir the eggs until curds form. Let the frittata cook until the bottom is firm but the top is still runny. Place the sauté pan under a hot broiler and cook until the top is just firm. Unmold the frittata onto a plate. Serve the frittata warm or at room temperature. If desired, lightly toast the bread. To make 1 panino, fold the frittata in half and place between 2 slices of bread. To make 2 panini, cut the frittata in half and place each half between bread slices.

Makes 1 to 2 panini.
