Pancake Mix

For the Pancake Mix
4 cups all-purpose flour
3 Tablespoons baking powder
2 teaspoons baking soda
1 teaspoon salt (optional)
3 Tablespoons superfine sugar or vanilla sugar
For the Batter
1 large egg
1 cup milk or buttermilk
2 Tablespoon melted butter or Oil
1 cup Homemade Pancake Mix (Recipe Above)
Additional butter for the griddle

PANCAKE MIX
MIX all the ingredients together. Store the mix in an airtight glass or plastic container in a cool, dry place, like your pantry. It should keep for up to six months.
PANCAKE BATTER
Combine beaten egg, milk, and melted butter.
Add pancake mix. MIX until well combined.
HEAT a flat griddle or pan. ADD about 1 teaspoon butter.
SPOON 1/4 cup of batter onto the hot griddle.
When bubbles appear top of the pancakes, TURN them over and cook for 1-2 minutes until golden brown on both sides. Serve with your favorite syrup and butter. Devour!
