PROTEIN CONFETTI CLOUD COOKIES

Cookie Base

½ cup (120 g) liquid egg whites (carton) •

• 1 tsp cream of tartar (or ½ tsp lemon juice)

¾ cup (75 g) sugar-free cake mix •

¼ cup (25 g) vanilla whey or casein protein • powder

2 tbsp (15 g) sugar-free sprinkles •

1. Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.

2. In a large clean bowl, whip egg whites + cream of tartar until stiff peaks form.

3. In a separate bowl, whisk together cake mix + protein powder.

4. Gently fold dry mix into whipped egg whites a little at a time until combined.

5. Scoop batter into 5 large mounds on the baking sheet.

6. Top each with sprinkles.

7. Bake for 16-18 minutes, until puffed and lightly golden.

8. Let cool completely before removing - cookies will firm up as they cool.
