Parmesan and Almond Baked Asparagus Fries

1 cup Almonds

1/2 cup Parmesan Cheese

1/2 teaspoon Salt

1/2 teaspoon Paprika

1/4 teaspoon Ground Black Pepper

1/2 cup All-Purpose Flour

2 Egg

1 pound Asparagus

1/4 cup Plain Greek Yogurt

1/4 cup Cream Cheese

1 clove Garlic

1 tablespoon Fresh Chives

1 Lemon

1 pinch Salt

Preheat oven to 425 degrees F (220 degrees C).

In a food processor, pulse Almonds (1 cup) until they become coarse crumbs.

Mix in the Parmesan Cheese (1/2 cup), Salt (1/2 tsp), Paprika (1/2 tsp) and Ground Black Pepper (1/4 tsp).

Prepare your workspace by putting the All-Purpose Flour (1/2 cup), Egg (2) and almond mixture in three separate large shallow dishes.

Trim the tough bottoms off of your Asparagus (1 lb).

Roll each asparagus spear in flour, then dip and coat in the eggs, and coat with almond crumbs.

Place on a parchment paper lined baking sheet and bake for 10 to 12 minutes, or until asparagus are tender when pierced with a fork.

While the asparagus cooks, make the yogurt dip. Combine Plain Greek Yogurt (1/4 cup), Cream Cheese (1/4 cup), Garlic (1 clove), Fresh Chives (1 Tbsp), juice from Lemon (1) and Salt (1 pinch). Serve and enjoy!
