Steamed Fish 清蒸鱼

Fresh fish - e.g. Barramundi, cod approx 900g; also works with fish fillet (must be fresh though)

Condiments: ginger (sliced), spring onion (chunks to steam and thinly sliced to garnish), coriander, salt, 料酒, 蒸鱼豉油 ~150mL, oil

步驟

1. Clean fish: remove any blood/guts (important!!), 刮 any scales. Rinse and make 3 shallow cuts on both sides, insert ginger slices into slots and rub with salt first then 料酒. Insert some more ginger and spring onion chunks in gut cavity. Marinade for 10-15 min

2. Place in steamer for 10-15 min (pending size), then add 蒸鱼豉油

3. To finish, remove from steamer, remove gut ginger/spring onion, top with sliced spring onion and coriander for garnish, then pour over heated hot oil
