10 Chicken thighs (boneless skinless)
1/2 tsp Salt
1/2 tsp Black pepper
Marinade:
1 cup Coconut milk (unsweetened)
1/3 cup pineapple juice
1 1/2 tbsp Soy sauce
1 tbsp Honey
1 tbsp Lime juice
3 cloves Garlic (minced)
1 tsp Ginger (minced)
1 tsp Paprika
1 tsp Chili flakes
1/2 tbsp Butter (salted)
1 1/2 tbsp Olive oil (for frying)
步驟
Season chicken with salt/pepper
Make marinade
Add marinade to chicken and cover
Marinate for 30min
Heat olive oil and pan fry chicken on med/high heat (5-6min each side/remove)
Add remainder of marinade to pan, add butter, and let simmer for 5min on med heat
Add chicken into sauce
Served with rice, green onions, cilantro, and pineapple chunks.
