Protein Oatmeal

1/2 cup rolled oats
1/2 cup liquid egg whites
1/2 cup plus 2 tablespoons unsweetened almond milk (or öther desired milk) (divided)
1-2 tablespoons vanilla protein powder
2 teaspoons chia seeds
1/4 teaspoon cinnamon
1/2 cup fresh or frozen blueberries (or other preferred fruit)
For Topping (optional)
Drizzle of natural peanut butter
Sprinkle of hemp hearts

In a microwave-safe bowl, combine the oats egg whites and 1/2 cup almond milk. Microwave for 2 minutes, stopping to whisk the oatmeal vigorously every 30 seconds (this is important for fluffy oatmeal. Stir in the protein powder, chia seeds and cinnamon and an additional 2 tablespoons of almond milk (or until desired creaminess is achieved). Allow oatmeal to sit for 2 minutes. Stir in blueberries or other desired fruit. Top with a drizzle of natural peanut butter and sprinkle of hemp hearts, if desired.
NOTE: If you don't want to add protein powder, you may wish to sub in a bit of honey or maple syrup to incorporate some extra sweetness.
