Sticky Honey Sriracha Salmon with Coconut Rice and Mango Sal

For the Salmon:

2 salmon fillets (about 6 oz each)

Salt & pepper

1–2 tsp oil

For the Marinade/Glaze:

2 tbsp soy sauce

2 tbsp honey

1 tbsp sriracha, to taste

2 cloves garlic, grated

1 tsp fresh ginger, grated (to taste)

Juice of 1 lime

1/2 tsp salt

1 tsp black pepper

1 tsp smoked paprika (optional)

For the Coconut Rice:

1 tbsp olive oil

2 garlic cloves, smashed

3–4 thin slices fresh ginger

1 cup jasmine rice, rinsed

1 cup full-fat coconut milk

1/2 cup water + 2 tbsp extra

1/2 tsp salt

1 tsp sugar (optional, for extra sweetness)

1 kaffir lime leaf or zest from 1/2 lime

Thai basil or cilantro, for garnish

For the Mango Salsa:

1 ripe mango, diced

1 red bell pepper, finely chopped

1 jalapeño, finely diced

1/4 small red onion, finely diced

1 avocado, diced

1–2 cloves garlic, grated

Juice of 1 lime, to taste

Salt and pepper, to taste

1–2 tbsp chopped cilantro
