Lemon Cookies

INGREDIENTS for 24 medium cookies

2 c. flour, 1/2 tsp. baking powder, 1/2 tsp. salt,

1/2 tsp. baking soda, 1/2 c. butter (one stick)

3/4 c. sugar, 3 TBS. lemon zest, 1 egg,

3 TBS. lemon juice, 1 tsp. lemon extract (I used vanilla extract)

GLAZE

1 1/2 c. powdered sugar, 4 TBS. lemon juice

DIRECTIONS preheat oven to 350. Line your cookie sheets with parchment paper.

Sift together the dry ingredients, flour, baking powder, salt, and baking soda, set aside.

Using a stand mixer, cream together butter and sugar, until light and fluffy. Mix in egg, add lemon juice and lemon zest. Add dry ingredients and mix well.

Chill dough for at least 30 minutes. With a small cookie scoop, place your cookies on a prepared baking sheet 2 inches apart. Bake for 10 minutes or until they start to slightly brown on the edges. Remove from oven, let cookies cool on baking sheet.

For the glaze, combine lemon juice and powdered sugar. Dip the cookie tops into glaze and place on wire rack to dry. You can also drizzle the glaze. I suggest dipping, so each bite has that magical glaze, because the glaze really is the star of this show! ❤️RSA
