Crunchy Sesame Carrot Salad

3–4 large carrots, cut into matchsticks

2–3 scallions, thinly sliced

2 tbsp cilantro, chopped

2 tbsp sesame oil

1 tbsp honey

1 tbsp lemon juice

1 tsp grated ginger

1 clove garlic, grated

2 tsp toasted sesame seeds

1–2 tsp chili crisp (optional)

Kosher salt, to taste

步驟

Toss carrots with a pinch of salt. Let sit 5–10 minutes, then drain excess liquid.

In a bowl, mix sesame oil, honey, lemon juice, ginger, garlic, sesame seeds, and chili crisp.

Add carrots, scallions, and cilantro. Toss well.

Taste, adjust salt, and serve.
