Blueberry Muffins With Lemon Ginger Lemon Sugar

These blueberry muffins with lemon ginger sugar are out of this world! Easy to make. Impossible to stop eating.

What you’ll need: 👩🏻🍳
2 large eggs
1/2 cup, salted melted butter
1/2 white sugar
1/2 brown sugar
1/3 vanilla or plain greek style yogurt
1 tsp vanilla extract
2 cups all-purpose flour
2 tsp baking powder
1 tsp kosher salt
1/3 cup milk (any kind)
Around 3 cups of fresh blueberries (or raspberries)
Lemon Ginger sugar topping:
1/2 cup turbinado sugar, 1 tsp freshly grated ginger, 1 tsp lemon zest
Make it:

Preheat to 375°F.
In a large bowl, whisk together the eggs, butter, white and brown sugar, yogurt, and vanilla until smooth.
Next add in the flour, baking powder and salt. Slowly add in the milk, a few tablespoons at a time, mixing into batter until smooth and incorporated.
Pour in the blueberries and gently mix with a spatula.
In a separate small bowl, add the topping ingredients and mix until well combined.
Line a large muffin tin with paper liners or use butter, if not using liners, and portion the batter into each cup.
Sprinkle generously with the lemon ginger sugar.
Bake for 30-35 minutes or until the tops are raised and golden brown.
Let cool and enjoy!
