For the Blueberry Chia Filling:
2 cups fresh or frozen blueberries
2 tbsp chia seeds
¾ cup sugar (or to taste)
1 tsp vanilla extract
½ cup water

1️⃣ Make the Crust: In a small bowl, mix graham cracker crumbs and melted butter until well combined. Press the mixture into a 9-inch pie dish to form an even crust. Place in the freezer to firm up while preparing the filling.
2️⃣ Prepare the Filling: In a saucepan, cook the blueberries, sugar, vanilla, and water over medium heat, stirring occasionally, until the blueberries start breaking down and the mixture thickens (about 10 minutes).
3️⃣ Add Chia Seeds: Remove the blueberry mixture from the heat and stir in the chia seeds. Let the filling sit for 30 minutes to thicken as the chia seeds absorb the liquid.
4️⃣ Assemble the Pie: Once the filling has cooled and thickened, pour it into the prepared pie crust. Smooth the top and place the pie in the refrigerator to chill for at least 2 hours.
5️⃣ Serve: Optionally, top with whipped cream or enjoy as-is!
