Viral Healthy ‘japanese Cheesecake

16 oz 2% cottage cheese
1/4 cup maple syrup (or liquid sweetener of choice)
1 tsp vanilla extract
3-4 whole graham crackers
How to:

Add the cottage cheese, maple syrup and vanilla extract to a blender. Blend for 30 seconds or until smooth.
Add the mixture back into the cottage cheese container, or a similar sized container.
Break the graham crackers apart following the four seams (you should have 4 rectangle size graham crackers per sheet). Push them into the cottage cheese so they are as fully covered as possible.
Cover with the lid and refrigerate for at least 2 hours, but 8 hours or overnight makes the best texture.
Scoop and enjoy!
