Fattoushe Salade

6 Gem Lettuce Leaves
1 Romaine Lettuce Heart
1 cup Cherry Tomatoes, halved
3 Lebanese Cucumbers, sliced into half moons
1 Green Pepper, diced
2 Green Onions, thinly sliced
3 Red Radishes, thinly sliced with a mandoline
1/4 cup Chopped Radicchio
1/4 cup Fresh Mint Leaves
1/4 cup Parsley Leaves
1/4 cup Purslane Leaves @les_fermes_aquaverti
1 cup Fresh Pomegranate
1 cup Fried and Seasoned Pita Chips @aspiceaffair
For the Pomegranate Molasses Vinaigrette:
Juice of 1 Lemon
1/4 cup White Vinegar
1/2 cup Pomegranate Molasses
1 1/2 cups Olive Oil
Salt and Pepper to taste
2 tbsp Sumac
2 tbsp Dried Mint

Prepare the Salad: Wash and dry the lettuces, then tear them into bite-sized pieces. Combine with cherry tomatoes, cucumbers, green pepper, green onions, radishes, radicchio, mint, parsley, and purslane in a large salad bowl. Add the pomegranate arils and fried pita chips.
Make the Pomegranate Molasses Vinaigrette: In a small bowl, whisk together lemon juice, white vinegar, and pomegranate molasses until well combined. Slowly drizzle in the olive oil while whisking continuously until emulsified. Season with salt and pepper to taste. Stir in sumac and dried mint.
Dress the Salad: Pour the pomegranate molasses vinaigrette over the salad ingredients. Toss gently until everything is evenly coated.
Serve: Transfer the salad to a serving dish or individual plates. Garnish with extra mint leaves seasoned pita chips pommegranate and pommegranate molasses .
