Guacamole and Shrimp Tostadas

These are absolutely gonna be a favorite easy and super delicious !

16 oz shrimp cleaned, deveined tail off. I'm using large shrimp.
1 tablespoon all purpose seasoning and paprika
1/2 teaspoon salt
1 tablespoon oil to cook the shrimp
Chipotle mayo sauce: blend
1/2 cup mayonnaise
2-3 tablespoons of chipotle adobo sauce
1/4 teaspoon salt
1/2 lime juice
Simple guacamole: mash together
3 avocados
1 teaspoon salt and pepper
Juice of 1-2 lime according to your taste
Tostada shells or corn tortilla fried till crispy
Make your simple, guacamole, cover, and set aside.
Mix ingredients to make chipotle mayo, refrigerate till ready to use.
Season your shrimp with all purpose seasoning, paprika,salt and olive oil . Mix gently.
You can use ready me, tostada shells, or fry your corn tortillas till crispy. Drain on a paper towel.
Cook your shrimp in a tablespoon of olive oil.
Cook only 2 to 3 minutes total cook time flipping as needed . DO NOT overcook the shrimp or it will be rubbery . Remove from the pan.
Assemble the tostada by spreading guacamole, then adding the shrimp and topping by drizzling chipotle mayo .
Serve with Spanish rice, chips and salsa. Margarita or a cold beer.
