I have been tweeking this recipe for years and am SO excited to finally share.

Babka is definitely up there for me with my favourites, and this one does not disappoint.

Loaded but not over the top.

Sweet, but not too sweet.

Dense but still fluffy.

Proceed with caution!!!!

One slice will never be enough….

Ps - this recipe makes 3 babkas.

They freeze amazing! So worth making once and enjoying for a few weeks 😉

Loaded chocolate Babka

For dough:

2 Tbsp yeast

1 cup sugar

1 cup warm water

2 ½ pounds bread flour (you can use regular flour too)

1 1/2 tsp salt

1 cup oil

1 cup milk of choice (I use oat milk)

3 eggs

1 pk instant vanilla pudding powder (I use osem)

Filling

2 cups sugar

1 cup cocoa

1 pack chocolate instant pudding

1/2 tsp cinnamon

Pinch salt

Oil to coat (approximately 3/4 cup)

Crumb topping

1 stick margarine

1 1/4 cup flour

1 cup sugar

2 tsp vanilla bean paste

Pinch of salt

Enough oil to get a good crumb consistency.

1 egg, for egg wash

Chocolate glaze

2 cups confectioners sugar

2 tbsp cocoa powder

Pinch salt

2 tsp honey

1/4 cup water

Mix together until smooth. If it’s too thick add a drop of water at a time. If it’s too thin add additional confectioners sugar to get a thick but spreadable glaze.

Start by mixing yeast, sugar and warm water. Mix together and let proof.

Once it’s bubbly add oil, milk, eggs, flour, pudding powder and salt.

Knead on low speed until dough comes together and is smooth but still sticky when pinching. (Dough should slightly stick to your fingers but not too much. If dough is still very wet add a little flour at a time.)

Transfer to an oiled bowl, cover and let

rise until doubled - approximately an hour and a half.

While it rises prepare your filling.

combine sugar, cocoa powder, chocolate pudding powder, cinnamon and salt.

To assemble :

If dough is slightly sticky oil your counter lightly.

Using a rolling pin, spread dough into one large rectangle

Make sure to roll out as thin as possible - the thinner the dough the more layers you will achieve.
