1 block super firm tofu, drained, dried, and crumbled

8 oz fresh green beans, chopped

1 red bell pepper, diced

6 scallions, chopped

1 tomato, diced

1 jalapeño, de-seeded and diced

5 cloves garlic, minced

1 cup basil leaves, thinly sliced

4 tbsp sesame oil

1/4 cup soy sauce or coconut aminos

1 lime, juiced

2 tbsp chili oil

rice, crushed peanuts, and scallions for serving

步驟

heat a cast iron pan over medium high with 3-4 tbsp oil. add tofu with a few pinches of salt and stir in. cook 1-2 mins. add green beans and cook 1-2 mins. add bell pepper + scallion and cook 1 min. add tomato + jalapeño and cook 1 min add garlic and cook 30 secs. add fresh basil, then pour in sesame oil, soy sauce, lime juice, and chili oil. cook down until tofu starts to caramelize and brown, about 2-3 mins. serve over rice with crushed peanuts and scallion.
