Take one of those leftover cauliflower steaks, chop it up, and sauté it with baby spinach, red onion, and bell peppers (I just diced up a couple of mini bell peppers). There's already spice on the cauliflower steaks, but feel free to add more minced garlic if you wish. Before serving, top it with a fried egg and a sprinkle of fresh parsley for a savory breakfast hash in less than 10 minutes!
