Three-cheese Cajun Chicken Spaghetti with Creamy Velveeta Al

For the chicken:
2 boneless, skinless chicken breasts (sliced thin)
1 tbsp Cajun seasoning
1 tbsp olive oil
Salt & pepper to taste
For the pasta & sauce:
300g spaghetti (or any pasta you like)
2 tbsp butter
3 cloves garlic, minced
1 cup heavy cream
½ cup milk
150g Velveeta cheese (cubed)
½ cup shredded mozzarella cheese
½ cup grated Parmesan cheese
1 tsp Cajun seasoning (add more for extra kick)
Salt & black pepper to taste
Fresh parsley for garnish

Cook the pasta:
Boil spaghetti in salted water until al dente. Drain and set aside (reserve ½ cup of pasta water).
Cook the chicken:
Season sliced chicken with Cajun seasoning, salt, and pepper.
Heat olive oil in a large skillet and sear the chicken over medium-high heat until golden and cooked through (about 4–5 minutes per side). Remove and set aside.
Make the creamy sauce:
In the same skillet, melt butter and sauté garlic until fragrant.
Add heavy cream and milk, stirring gently.
Lower heat and stir in Velveeta cubes until melted and smooth.
Add mozzarella and Parmesan, stirring until the sauce is rich and creamy.
Mix in Cajun seasoning, and adjust salt and pepper to taste.
Combine everything:
Add the cooked spaghetti and chicken into the sauce.
Toss to coat evenly. If the sauce is too thick, add a splash of pasta water.
Serve:
Garnish with chopped parsley and an extra sprinkle of Parmesan.
Serve hot and creamy with garlic bread or a crisp salad.
