Salted Caramels

Homemade Salted Caramel Candies Recipe:

60 g water

75 g light corn syrup

300 g white granulated sugar

65 g unsalted butter (if vegan, use 70 g)

225 g heavy cream (or plant cream alternative)

1/2 tsp fine sea salt

1 tsp pure vanilla extract

optional flaky sea salt, for topping

In a heavy-bottomed saucepan, combine the sugar, corn syrup, and water. Stir gently over medium-high heat until the sugar dissolves, about 3 minutes. If you see sugar crystals stuck on the sides, brush them away with a damp pastry brush or cover the pan for a minute to let the steam do the job.

Turn the heat down to medium and keep cooking until the bubbling slows down and the syrup turns a deep amber color, about 4 to 7 minutes.

In a small bowl, mix together the cream, vanilla, and salt.

Take the pan off the heat and add the butter a few pieces at a time, stirring well. Slowly pour in the cream mixture and keep stirring until the caramel is smooth.

Put the pan back on medium heat and bring it to a gentle boil. Cook, stirring often, until the caramel reaches 250–255°F. (At 250°F the caramels will be softer; at 255°F they’ll be a little chewier.)

Right away, pour the caramel into the prepared pan. Let it sit for about 15 minutes, then sprinkle the top with flaky salt. Leave the pan at room temperature until the caramel cools completely, which will take a 5- 6 hours.
