Vegan Gochujang Tofu

400g firm tofu, pressed & cubed

1 green pepper, sliced

1 red pepper, sliced

1 onion, cut into petals

2 green chillies, sliced

2 spring onions, chopped (plus more to garnish)

1 tbsp cornflour

2 tbsp vegetable oil

For the gochujang sauce:

2 tbsp gochujang paste

1 tbsp soy sauce

1 tbsp rice vinegar

1 tbsp maple syrup

1 tbsp ketchup

2 tbsp water

Coat tofu cubes in cornflour and fry in oil over medium heat until golden and crisp. Set aside.

In the same pan, stir-fry onion, peppers, and chillies for 2–3 mins on high heat until charred but still crunchy.

Whisk all sauce ingredients in a bowl until smooth.

Return tofu to the pan, pour over the gochujang sauce, and toss everything to coat. Simmer for 2 mins until thickened and glossy.

Stir through spring onions, garnish with Spring onions, Bell peppers and fresh onions on top, and serve hot with rice or noodles.
