Lemon Poppyseed Biscotti

3 tbsp oil (any variety)

1 egg

1/2 cup sugar

Rind of 1 lemon

3 tbsp lemon juice

1 tbsp poppyseeds

1/4 cup rolled oats

1 cup all purpose flour

1/2 tsp baking powder

Pinch of salt

步驟

In a bowl add oil, egg, sugar and mix well.

Add rind of one medium lemon and squeeze out 3 tbsp lemon juice.

Add poppyseeds, oats, flour, baking powder and salt.

Form into 1 log on parchment paper.

Bake at 325 F for 30 minutes, let rest 5 minutes, then slice into 1/2” slices and bake another 25 minutes.

Let cool and enjoy!
